But, you see, two constant beams moving at the speed of light for several second, you cannot stop that, ever.

Ahh, but you can. All you have to do is know the two points the phasers will be aimed at, calculate the line that intersects those two points, and place your lightsaber along that line. Simple geometry, and the fact that these phaser beams will exist for several seconds means you actually have to move the lightsaber less.
